Food & Beverage Rosella KPT - Sushi Chef

Rosella is a New American Sushi Restaurant opening its second location in Kennebunk, Maine this summer. Rosella highlights often overlooked, domestic species emphasizing sustainability, offering locally caught fish and shellfish. Some species come from sustainable farms, while others are wild-caught through methods with minimal environmental impact.

We are looking for an experienced sushi chef for a full-time position. Compensation is a competitive hourly rate, with consistent gratuity.  

Responsibilities Include: 

  • A passion for sushi and Japanese cuisine  
  • An interest in learning more about American fish and their application for sushi.  
  • Prepping and executing several types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety. 
  • Prepping for and managing a sushi station from start to finish 
  • Taking guests while simultaneously preparing food for the restaurant.

JOB DESCRIPTION

The Rosella KPT Restaurant Manager is responsible for creating and orchestrating overall restaurant procedure with the ultimate goal of maintaining revenue, profitability and quality goals. This individual should possess strong communication skills, strong problem solving skills, exceptional team building skills and able to establish a friendly atmosphere of superior guest service and product quality. This position requires strong supervisory and organizational skills and solid written, verbal and interpersonal communications skills.

Major responsibilities include handling and maintaining all reservations, responding to guest needs, ensuring safety and security, performing administrative tasks, and training, maintaining and managing a motivated and skilled work force while giving exemplary performance for the staff to follow. The ideal candidate will have the ability to run the entire room effectively and be a general on the floor. Directing all aspects of the front of the house. 

ESSENTIAL JOB FUNCTIONS

Restaurant Operations:

  • Works directly with the Director of Operations, and brand founders to effectively manage all aspects of the food and beverage operations and staff

Food & Beverage Sous Chef

The Sous Chef is responsible for ensuring that all meals coming from the kitchen are well prepared regarding quality, consistency, eye appeal, taste, and food cost. They are expected to provide training for all staff; meet company quality standards; assist in establishing and enforcing food specifications, portion control, recipes, and sanitation. The Sous Chef is also responsible for controlling food and labor costs while maximizing guest satisfaction.

Job Description/Summary:  A Front Desk Agent is responsible for performing all desk related functions including but not limited to checking guests in and out, making room reservations, ensuring all daily guest amenities are prepared and delivered on time, giving various recommendations on what to do on property and in the area and providing directions. All front desk agents must maintain the company’s high standards of customer service and concierge services. This position requires focused, detail orientated individuals with the ability to multitask in a very busy resort setting.

ESSENTIAL JOB FUNCTIONS:

Guest Service

  • Maintains guest service as the driving philosophy of the hotel, constantly seeking ways to delight our guests.
  • Personally demonstrates a commitment to guest service by responding promptly to guest needs with an interest and concern in satisfying every guest
  • Smiling and greeting all guests by name when possible. Welcoming returning guests back with enthusiasm and acknowledging house-guests.
  • Ensures hotel standards and services contribute to the delivery of consistent guest service.
  • Establishes a friendly atmosphere of superior guest service and product quality.
  • Demonstrates consistent anticipation of guests’ needs
  • Resolve guest complaints within scope of authority; otherwise, refer the matter to management

Basic Front Desk Functions

  • Handles check in / checkout process, resisters and assigns rooms to guests 
  •  Provide quotes for room rates and up-sell the guest when possible
  • Assist in the coordination between the front desk and housekeeping departments
  • Responds to guest inquiries
  • Manage phone activity including providing general knowledge to callers.
  • Manages walk-in traffic.
  • Verify that the correct charges are posted to the corresponding guest folio
  • Collect payment for charges on the guest folio
  • Ensure all cash and cash equivalents are accounted for and balanced at the beginning and end of each work shift

        Safety and Security

  • Ensuring that all guests information is kept secure
  • Ensuring keys are correctly tagged and handed out
  • Awareness of all safety rules and regulations.

Physical Demands

  • Use the guests’ names whenever possible
  • Use the Fifteen/Five Rule: Always make eye contact within 15 feet of a guest and greet them within 5 feet.
  • Assist guests with luggage or with any questions they may have whenever necessary
  • Willingness to take the extra step to make a guest’s stay memorable
  • Vast understanding of all KRC sister properties
  • Any other duties as assigned by supervisor.
    • Must be able to stand at a desk for up to 8 hours per day. Walking and sitting are occasionally required.
    • Must be able to lift up to 30 lbs. occasionally.
    • Must be able to push and pull carts and equipment weighing up to of 100 lbs. occasionally.
    • Requires grasping, writing, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity.
    • Requires manual dexterity to use and operate all necessary equipment.

Requirements:

  • Excellent guest service, sales, and communication skills (verbal and written)·
  • Prior restaurant host, concierge or maître d’ experience preferred
  • Extensive knowledge of the local area and KRC properties preferred
  • Strong organizational and time management skills
  • Proficient in restaurant reservations systems: OpenTable, Resy, etc.

Job Description/Summary:

The reservations agent handles all aspects of restaurant reservations for all KRC properties while striving for the highest level of guest satisfaction as well as maximizing covers for each restaurant.

Essential Tasks:

  • Creates and accepts restaurant reservations for all KRC properties from all channels, such as telephone, email, and internet.
  • Responds to all guest requests in a timely manner, assesses the guest’s needs and provides helpful and accurate information about the properties, location, menus, specific dining experience and the local area, adding personal recommendations where appropriate to achieve maximum guest satisfaction
  • Resolves guest complaints, handling all guest interactions with the highest level of hospitality and professionalism, accommodating special requests whenever possible and alerting a manager where appropriate
  • Accepts and executes gift certificate orders
  • Complies with all reservation related safety, security and financial procedures, restaurant policies and standards of conduct
  • Works harmoniously and professionally with co-workers and supervisors
  • · Communicates with and property managers regarding group bookings, blocking specific days or meal periods, shift flows, maximizing covers, appropriate turn times, updating floorplans, etc.
  • Any other duties as assigned by Supervisor

Physical Demands: 

  • Must be able to sit at a desk for up to 8 hours per day. Walking and standing are occasionally required 
  • Must be able to exert well-paced ability to reach other departments of the restaurant on a timely basis 
  • Must be able to lift up to 50 lbs. occasionally 
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity 
  • Must have finger dexterity to be able to operate office equipment such as computers, printers, 10-key adding machine, multi-line touch tone phone, filing cabinets, FAX machines, photocopiers, dolly, and other office equipment as needed
